25 Days of Christmas #2: OMG, This is Paleo?

It’s FRI-YAY…phew, finally! What a week! In keeping with the Friday theme, I thought it would be fitting to share my 2nd “go-to” as a “2 for 1” today – not only is it a great gift BUT it is one of my “go-to’s,” at least, once a week. 

Before I share, let me preface that I am by no means 100% Paleo, nor am I advocating that you MUST go Paleo to see results. What I DO advocate is that you find a lifestyle (i.e. like how you eat) that works for YOU and that helps you along the positive trajectory of reaching your goals. Of course, I want it to be effortless and automated for you too! 🙂

Over the last few years – again, by no means super strict – I have adopted more of a Paleo diet approach. I have found that it works for ME & MY BODY. Do I consume items that are not part of the Paleo lifestyle? Absolutely! Do I lean more towards lean proteins, healthy fats, and loads of veggies most of the time? I sure do! This is the investigative work, though, I have done, and continue to do so, every single day. 

jbcookbookToday, I am showcasing a top-notch cookbook trending in my kitchen…and giving a HUGE SHOUT-OUT to one of my FAVORITE bloggers – Juli Bauer (“Juli Bauer’s Paleo Cookbook” & PaleOMG). I have to admit, I aspire to have a blog like Juli’s one day! It’s FUN, down to earth, AND, it has some of the best content when it comes to new recipes, fitness, fashion, and so much more! As I mentioned before, her cookbook has been a weekly go-to of mine since I received my copy back in October. Honestly, I really don’t know why it took me so long to purchase! In any event, I have become kind of obsessed with her casseroles, especially her Buffalo Chicken Casserole (kind of her “claim to fame”). Between the veggies, lean protein, and a side of spiciness, this is a beyond tasty dinner, next day’s lunch, and a total score for dinner leftovers too! During this time of year, I like making dishes that I can double, freeze, and then pull out for those nights when I am in a funk, are “unprepared” (hello last minute dinner guests), or just need a cooking time-out. Plus, there is something about a warm, hearty dish, alongside a glass of your favorite vino by the fire that feels like the Holiday’s!

Okay, not going to lie, “it’s usually take a bite, respond to emails, take a sip, and press the button for the gas fireplace to turn on.”
